On the first stretch of Whole30 not being able partake in the simple carbohydrates we all know and love, might make you a little hangry. Luckily, we’ve found a way to make you feel just as festive, with our Whole30 cauliflower cilantro lime rice. To kick-start your new lifestyle feel free to pair this with any dish. I know that you’re thinking this is going to be a challenge compared to the your normal boil, simmer, and done rice. On the contrary, the only other step to creating this zesty veggie rice is a food processor. Even the food processor isn’t really necessary. But it is cheaper and a better ingredient when you make it yourself. It’s as simple as rinse, maybe some rough chopping action, and a few blitz’s in the food processor. Then boom, boil as you normally would, strain, add some flavor and you’ve got yourself some cauliflower rice!
Cauliflower itself is such an amazing ingredient to cook in your paleo or Whole30 dishes. But as cauliflower is broken down it tends to release a smell and flavor that is not the best. thats why we used chicken stock to boil the rice in. It helps bring that “health” taste down but tastes delicious.
Making swaps like this during your Whole30 challenge or daily life adds more veggie packed health benefits. As well as more carbohydrates that wont leave you empty like most processed foods you supplement throughout the day.

Cilantro Lime Cauliflower Rice
Ingredients
- 1 medium head of cauliflower riced
- 1 cup chicken stock
- 2 cups water
- 2 cloves garlic minced
- 1/4 cup cilantro minced
- 1-2` tbsp fresh lime juice
Instructions
- 1.Add riced cauliflower, chicken stock, water and garlic to a stock pot and cook on medium to medium high heat. (about 10-15 minutes)2.Once cauliflower is cooked strain off any excess liquid.4.Add cilantro and amount of lime juice to your liking to the rice. Mix well. That's all folks!
