Our vegan banana bread granola is a great addition to your morning routine. Just make it the night before and you have breakfast for when you can’t get out of bed, a snack for those carb cravings throughout the day, or even a dessert topper.
Mornings are the worst sometimes. Especially when they have been melding together through this time. And when you don’t want to wake up and make breakfast before popping open the laptop we have the solution: granola. This vegan banana bread granola will not disappoint if you are first diving into this world of grain clusters with crunchy nuts and seeds.
Granola is so easy and diverse to where you could essentially make a variety of batches with a different ingredients. You can also enjoy granola in many applications. If you aren’t questioning why you haven’t tried making your own granola? then you should.
- Serve in a bowl with your favorite milk or alternative with slice fruit.
- Bring a little baggie on a hike for some quick energy.
- Top it on a smoothie.
- Add it as a garnish to stewed fruits and make a lazy cobbler.
- Make a savory version and use them as croutons.
Like we said the possibilities are endless.
With our recipe we used the natural sweetness from bananas and maple syrup to our advantage. This brings a satisfying sweetness to your granola without all the added sugar that some store bought brands hide.
We added some vegan chocolate chips because we had them on hand ( ok lets be honest we are team chocolate chip banana bread) but you can always leave them out to keep the sugar shock down.

Vegan Banana Bread Granola
Ingredients
- 3 cups oats gluten free if sensitive
- 1 cup buckwheat groats
- 1 cup pepitas
- 1 cup pecans chopped
- 2 tbsp flax seeds
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 cup neutral tasting oil
- 1/4 cup peanut butter
- 1/4 cup maple syrup grade A
- 1 tsp vanilla extract
- 1 1/2 ripe banana mashed
- 1/2 tsp salt
- 1 cup enjoy life chocolate chips optional
Instructions
- Preheat oven to 350°F
- Add oats, buckwheat, pepitas, pecans, flax, chia, salt, and cinnamon to a large bowl and combine.
- Combine the oil, peanut butter, maple syrup, vanilla, and mashed banana into a small sauce pan. Heat over medium heat until the mixture is well combined and small bubbles begin to appear.
- Add your sauce mixture to your oat mixture and stir until evenly incorporated
- Place granola on a parchment lined baking sheet and bake for 30-40 minutes. Stirring the mixture once halfway through. You know when this mixture is done when it is golden brown along the edges.
- Place out to cool and once it is at room temperature you can mix in the chocolate chips.
- Store in an air tight container for 2 weeks.
