Vegan Banana Bread Granola

Our vegan banana bread granola is a great addition to your morning routine. Just make it the night before and you have breakfast for when you can't get out of bed, a snack for those carb cravings throughout the day, or even a dessert topper.

Ingredients
  

  • 3 cups oats gluten free if sensitive
  • 1 cup buckwheat groats
  • 1 cup pepitas
  • 1 cup pecans chopped
  • 2 tbsp flax seeds
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 cup neutral tasting oil
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup grade A
  • 1 tsp vanilla extract
  • 1 1/2 ripe banana mashed
  • 1/2 tsp salt
  • 1 cup enjoy life chocolate chips optional

Method
 

  1. Preheat oven to 350°F
  2. Add oats, buckwheat, pepitas, pecans, flax, chia, salt, and cinnamon to a large bowl and combine.
  3. Combine the oil, peanut butter, maple syrup, vanilla, and mashed banana into a small sauce pan. Heat over medium heat until the mixture is well combined and small bubbles begin to appear.
  4. Add your sauce mixture to your oat mixture and stir until evenly incorporated
  5. Place granola on a parchment lined baking sheet and bake for 30-40 minutes. Stirring the mixture once halfway through. You know when this mixture is done when it is golden brown along the edges.
  6. Place out to cool and once it is at room temperature you can mix in the chocolate chips.
  7. Store in an air tight container for 2 weeks.
