Vegan Banana Bread Granola

Our vegan banana bread granola is a great addition to your morning routine. Just make it the night before and you have breakfast for when you can't get out of bed, a snack for those carb cravings throughout the day, or even a dessert topper.

Ingredients
  

  • 3 cups oats gluten free if sensitive
  • 1 cup buckwheat groats
  • 1 cup pepitas
  • 1 cup pecans chopped
  • 2 tbsp flax seeds
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 cup neutral tasting oil
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup grade A
  • 1 tsp vanilla extract
  • 1 1/2 ripe banana mashed
  • 1/2 tsp salt
  • 1 cup enjoy life chocolate chips optional

Instructions
 

  • Preheat oven to 350°F
  • Add oats, buckwheat, pepitas, pecans, flax, chia, salt, and cinnamon to a large bowl and combine.
  • Combine the oil, peanut butter, maple syrup, vanilla, and mashed banana into a small sauce pan. Heat over medium heat until the mixture is well combined and small bubbles begin to appear.
  • Add your sauce mixture to your oat mixture and stir until evenly incorporated
  • Place granola on a parchment lined baking sheet and bake for 30-40 minutes. Stirring the mixture once halfway through. You know when this mixture is done when it is golden brown along the edges.
  • Place out to cool and once it is at room temperature you can mix in the chocolate chips.
  • Store in an air tight container for 2 weeks.
