Beer Battered Cauliflower Wings with Creamy Coleslaw

Cauliflower Wings
- 1 medium head of cauliflower cut into similar sized pieces
- 1/2 cup vegan beer
- 1/2 cup water
- 1/2 cup corn starch or tapioca starch
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1 tbsp nutritional yeast
Vegan Creamy Coleslaw
- 1 14 oz bag or coleslaw mix
- 1/2 cup vegan mayo
- 2 tbsp apple cider vinegar
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 1/4 tsp celery salt

To make the coleslaw. In a small bowl, combine the mayo, apple cider vinegar, granulated sugar, salt, and celery seed. Mix until well combined.
In a large add the bagged coleslaw mix and mayo mixture. Mix until well combined. Once the coleslaw is well combined set in the fridge while you are making the cauliflower wings.
Cauliflower wings
To make the cauliflower wings. Heat a pot of frying oil to prepare. While the oil is heating up, make your batter by combining all the wet ingredients and dry ingredients until well combined and there are no clumps of starch or flour. This batter is going to have the consistency of thick pancake batter.
Chop head of cauliflower into similar sized florets. Add to batter and stir together until the wings have been covered well with the batter.
Once your oil has been heated up, drop cauliflower wings in small batches into the oil to help them cook evenly. Fry until wings have a golden color. Set on a paper towel to dry excess oil.
Toss cauliflower wings with carolina barbecue sauce right before serving. Serve with creamy coleslaw, pickles, and extra sauce.
